Shrimp Potato Salad

Ingredients
  • 3 lbs. potatoes, cooked, peeled and cut into s" cubes
  • 1 lb. cooked shrimp
  • 1 c. chopped celery
  • 1 c. chopped green pepper
  • 3 green onions, chopped, including tops
  • 1 cucumber, peeled, seeded and chopped
  • 3 sweet pickles, chopped
  • 3 tbsp. chopped parsley
  • 1 c. mayonnaise
  • 3 tbsp. lemon juice
  • Salt and pepper to taste
Recipe
  1. In a large bowl, combine the first 8 ingredients.
  2. In a small bowl, mix together mayonnaise and lemon juice. Add to potato mixture. Add salt and pepper to taste.
  3. Cover and chill at least 1 hour before serving.
  4. For a refreshing variation, add 1 apple, unpeeled, cored and chopped.
