Shrimp Potato Salad

Ingredients
- 3 lbs. potatoes, cooked, peeled and cut into s" cubes
- 1 lb. cooked shrimp
- 1 c. chopped celery
- 1 c. chopped green pepper
- 3 green onions, chopped, including tops
- 1 cucumber, peeled, seeded and chopped
- 3 sweet pickles, chopped
- 3 tbsp. chopped parsley
- 1 c. mayonnaise
- 3 tbsp. lemon juice
- Salt and pepper to taste
- In a large bowl, combine the first 8 ingredients.
- In a small bowl, mix together mayonnaise and lemon juice. Add to potato mixture. Add salt and pepper to taste.
- Cover and chill at least 1 hour before serving.
- For a refreshing variation, add 1 apple, unpeeled, cored and chopped.
