Rich German Potato Salad

Ingredients
  • 3 lbs. potatoes, cooked, peeled and sliced
  • 1 onion, thinly sliced
  • 1 tsp. sugar
  • 1 c. white wine vinegar
  • 1 c. mayonnaise
  • 1 c. whipping cream
  • Salt and pepper to taste
  • Dill for garnish
Recipe
  1. While potatoes are still warm, layer alternately with sliced onions in a large bowl.
  2. Add sugar to vinegar and pour over potato mixture and set aside for several hours, stirring frequently.
  3. Pour off vinegar not absorbed into potatoes.
  4. Blend together mayonnaise and cream and fold into potato mixture.
  5. Salt and pepper to taste. Sprinkle with dill. Serves 8.
