Potato Salad & Dill Dressing

Ingredients

  • 2 tblspn safflower oil
  • 250g baby new potatoes, halved
  • 1 large orange sweet potato, peeled, cut into 2.5cm cubes
  • 2 sticks celery, chopped
  • 4 spring onions, finely chopped
  • ½ small red cabbage, finely shredded
  • ½ cup French dressing
  • 1 tblspn chopped parsley
  • 1 tblspn French mustard
  • 1 tblspn chopped dill

Recipe

  1. Heat oil in a large pan, add potatoes, cook until potatoes are lightly browned and just tender, drain on absorbent paper.
  2. Combine potatoes in bowl with celery and spring onions.
  3. Add dressing, toss gently.
  4. Arrange salad on bed of shredded red cabbage.
  5. To make dressing: Combine all remaining ingredients in a jar, shake well.
  6. Serve warm or cold.
