Potato Salad & Dill Dressing

Ingredients
- 2 tblspn safflower oil
- 250g baby new potatoes, halved
- 1 large orange sweet potato, peeled, cut into 2.5cm cubes
- 2 sticks celery, chopped
- 4 spring onions, finely chopped
- ½ small red cabbage, finely shredded
- ½ cup French dressing
- 1 tblspn chopped parsley
- 1 tblspn French mustard
- 1 tblspn chopped dill
Recipe
- Heat oil in a large pan, add potatoes, cook until potatoes are lightly browned and just tender, drain on absorbent paper.
- Combine potatoes in bowl with celery and spring onions.
- Add dressing, toss gently.
- Arrange salad on bed of shredded red cabbage.
- To make dressing: Combine all remaining ingredients in a jar, shake well.
- Serve warm or cold.
