Mid-Eastern Potato Salad

Ingredients
- 2 lbs. potatoes, cooked, peeled and cubed
- 1 c. wine vinegar
- 1 small garlic clove, mashed
- 1 c. sliced radishes
- 1 c. chopped onions
- 3 tbsp. Lemon juice
- 1 c. olive oil
- i tsp. dry mustard
- 1 tsp. ground cumin
- 2 tbsp. Chopped parsley
- 1 1/2 tsp. dried mint leaves, crushed
- Salt and pepper to taste
- Place warm potatoes in a large bowl. Pour wine vinegar and garlic over them and let stand until potatoes are cool. Pour off any liquid not absorbed by potatoes. Add radishes and onions.
- In a small bowl, blend together lemon juice, olive oil, mustard, cumin, parsley and mint leaves. Add to potato mixture.
- Add salt and pepper to taste. Serve at room temperature. Serves 6.
