Mid-Eastern Potato Salad

Ingredients
  • 2 lbs. potatoes, cooked, peeled and cubed
  • 1 c. wine vinegar
  • 1 small garlic clove, mashed
  • 1 c. sliced radishes
  • 1 c. chopped onions
  • 3 tbsp. Lemon juice
  • 1 c. olive oil
  • i tsp. dry mustard
  • 1 tsp. ground cumin
  • 2 tbsp. Chopped parsley
  • 1 1/2 tsp. dried mint leaves, crushed
  • Salt and pepper to taste
Recipe
  1. Place warm potatoes in a large bowl. Pour wine vinegar and garlic over them and let stand until potatoes are cool. Pour off any liquid not absorbed by potatoes. Add radishes and onions.
  2. In a small bowl, blend together lemon juice, olive oil, mustard, cumin, parsley and mint leaves. Add to potato mixture.
  3. Add salt and pepper to taste. Serve at room temperature. Serves 6.
