German Potato Salad

Ingredients

  • 675g /1½lb potatoes salt
  • 1 large onion, sliced
  • 125g /4oz rinded streaky bacon
  • 1tbsp chopped chives
  • freshly ground black pepper
  • 225g / 8oz quark or sieved cottage cheese
  • chopped chives for garnish

Recipe

  1. Peel and thickly slice the potatoes, then boil in a pan of salted water for 10-12min until just cooked.
  2. Place the onion in a microwave serving dish, cover and cook for 2-3min, add the bacon and cook for a further 3-4min, stirring once.
  3. Drain the potatoes and add them to the dish with the chopped chives.
  4. Carefully stir the quark into the dish and season to taste.
  5. Heat, uncovered, for 3-4min on 70%, then serve immediately, garnished with a few extra chopped chives.

Serving suggestion: This is delicious served hot with sausages and mustard, or with German Sausage Loaves (p38). This salad may also be served cold. Do not freeze.
