Frankfurter & Potato Salad

Ingredients

  • ½kg (3 lb) new potatoes salt and pepper
  • 150 ml (¼ pint) (5/8 cup) white wine
  • 8 frankfurter sausages, sliced
  • 6 radishes
  • 3 hard-boiled eggs,sliced
  • 15 ml (1 tablespoon) chopped parsley

For the Dressing:

  • 85 ml (3floz) (3/8 cup) oil
  • 45 ml (1½ fl oz) (3 tablespoons)
  • wine vinegar
  • 5 ml (1 teaspoon) mustard salt and pepper

Recipe

  • Boil the potatoes for 20 minutes in salted water.
  • Drain and cut into cubes while still hot. Place in a salad bowl.
  • Pour in the white wine immediately and toss gently. Add the frankfurters. Cool.
  • Blend the oil, vinegar, mustard and seasoning in a watertight container.
  • Shake well, pour over the salad and toss.
  • Cut the radishes into flower shapes.
  • Use the egg slices and radish flowers to decorate the salad, and garnish with the parsley.
