Frankfurter & Potato Salad

SERVES: 6
Ingredients
- ½kg (3 lb) new potatoes salt and pepper
- 150 ml (¼ pint) (5/8 cup) white wine
- 8 frankfurter sausages, sliced
- 6 radishes
- 3 hard-boiled eggs,sliced
- 15 ml (1 tablespoon) chopped parsley
For the Dressing:
- 85 ml (3floz) (3/8 cup) oil
- 45 ml (1½ fl oz) (3 tablespoons)
- wine vinegar
- 5 ml (1 teaspoon) mustard salt and pepper
Recipe
- Boil the potatoes for 20 minutes in salted water.
- Drain and cut into cubes while still hot. Place in a salad bowl.
- Pour in the white wine immediately and toss gently. Add the frankfurters. Cool.
- Blend the oil, vinegar, mustard and seasoning in a watertight container.
- Shake well, pour over the salad and toss.
- Cut the radishes into flower shapes.
- Use the egg slices and radish flowers to decorate the salad, and garnish with the parsley.
