Farmers Potato Salad

Ingredients
- 1 lb. potatoes, cooked, peeled and sliced
- 1 tbsp. olive oil
- 1 tbsp. wine vinegar
- 1 tsp. sugar
- 1 c. chopped green onions, including tops
- 1 tbsp. chopped parsley
- Salt and pepper to taste
- 1/2 lbs. cooked knockwurst
- 1 lb. Sauerkraut, drained and chopped
- 4 slices Swiss cheese, cut into strips
- 1 c. sour cream
- 1 c. mayonnaise
- 1 c. catsup
- 1 tbsp. dill
- 1 small garlic, mashed
- Place warm potatoes in a large bowl. Mix together olive oil, vinegar and sugar. Pour over warm potatoes. Add green onions and parsley. Add salt and pepper to taste.
- Spread mixture in a 12" x 7 1/2" x 2" baking dish.
- Cut each knackwurst open lengthwise but not completely through. Press into salad mixture.
- Spoon sauerkraut over each knockwurst. Top each one with a strip of cheese. Bake in 350° oven for 30 minutes.
- In a small saucepan, combine sour cream, mayonnaise, catsup, dill and garlic. Heat until just warm.
- Serve with potato mixture or pour over and serve. Serves 8.
