Farmers Potato Salad

Ingredients
  • 1 lb. potatoes, cooked, peeled and sliced
  • 1 tbsp. olive oil
  • 1 tbsp. wine vinegar
  • 1 tsp. sugar
  • 1 c. chopped green onions, including tops
  • 1 tbsp. chopped parsley
  • Salt and pepper to taste
  • 1/2 lbs. cooked knockwurst
  • 1 lb. Sauerkraut, drained and chopped
  • 4 slices Swiss cheese, cut into strips
  • 1 c. sour cream
  • 1 c. mayonnaise
  • 1 c. catsup
  • 1 tbsp. dill
  • 1 small garlic, mashed
Recipe
  1. Place warm potatoes in a large bowl. Mix together olive oil, vinegar and sugar. Pour over warm potatoes. Add green onions and parsley. Add salt and pepper to taste.
  2. Spread mixture in a 12" x 7 1/2" x 2" baking dish.
  3. Cut each knackwurst open lengthwise but not completely through. Press into salad mixture.
  4. Spoon sauerkraut over each knockwurst. Top each one with a strip of cheese. Bake in 350° oven for 30 minutes.
  5. In a small saucepan, combine sour cream, mayonnaise, catsup, dill and garlic. Heat until just warm.
  6. Serve with potato mixture or pour over and serve. Serves 8.
