Creamy Potato Salad

Ingredients

  • 2 small potatoes 1/4 cup chopped celery
  • 2 tablespoons thinly sliced green onion
  • 1 hard-cooked egg, coarsely chopped
  • ¼ teaspoon salt
  • ¼ teaspoon celery seed
  • ¼ cup mayonnaise or salad dressing
  • 2 teaspoons vinegar
  • 1 teaspoon sugar
  • 1 teaspoon prepared mustard

Recipe

  1. In covered pan cook potatoes in boiling salted water 20 to 25 minutes or till tender; drain.
  2. Peel and cube. Combine potatoes, celery, green onion, egg, salt, celery seed, and dash pepper.
  3. Combine mayonnaise, vinegar, sugar, and mustard; toss with potato mixture. Chill.
