Casserole Potato Salad

Ingredients
  • 2 lbs. potatoes, cooked, peeled and thinly sliced
  • 1 c. finely chopped celery and leaves
  • 1 c. chopped parsley
  • 1 c. finely chopped onions
  • 1 tsp. dried tarragon
  • 1 c. prepared French dressing
  • Salt and pepper to taste
Recipe
  1. Set oven temperature at 350°.
  2. In a small bowl, combine celery, parsley, onions and tarragon.
  3. In a 1½ qt. baking dish, layer potatoes and celery mixture. Pour French dressing over layers and bake in 350° until heated through.
  4. Remove from oven, let cool at least 1 hour and serve slightly warm. Serves 6.
