Beef and potato salad

SERVES:  4-6

Ingredients

  • 3 large potatoes, peeled
  • 3 cups beef steak, cooked and cut into strips
  • 2 pimentos, cut into strips
  • 3 tblspn olive oil
  • ¼ cup red wine vinegar
  • 1 lettuce

Recipe

  1. Using a melon-baller, scoop the potatoes into small balls until you have 2 cups.
  2. Cook potato balls in salted boiling water until tender, drain.
  3. Combine potatoes, beef, pimento, olive oil and vinegar. Toss well.
  4. Serve salad on a bed of lettuce Garnish with a sprig of parsley and cracked black pepper, if desired.
