Beef and potato salad

SERVES: 4-6
Ingredients
- 3 large potatoes, peeled
- 3 cups beef steak, cooked and cut into strips
- 2 pimentos, cut into strips
- 3 tblspn olive oil
- ¼ cup red wine vinegar
- 1 lettuce
Recipe
- Using a melon-baller, scoop the potatoes into small balls until you have 2 cups.
- Cook potato balls in salted boiling water until tender, drain.
- Combine potatoes, beef, pimento, olive oil and vinegar. Toss well.
- Serve salad on a bed of lettuce Garnish with a sprig of parsley and cracked black pepper, if desired.
